Beef Kofta in Pitta Pockets

Method
Begin by adding the couscous and 300ml boiling water to a heatproof bowl. Cover and leave for 15 minutes.
Meanwhile, prepare the kofta by adding the ground beef, salt, pepper, and 1 tsp garam masala to a mixing bowl. Use your hands to mix and mold the kofta into 8 sausage-like shapes. Heat a drizzle of olive oil in a frying pan. Add the kofta and fry until golden, turning regularly for around 8 minutes.
Meanwhile, slice the lettuce, half the tomatoes, and grate the onion and cucumber. Mix these in a bowl with salt and lemon juice.
Warm the pitta breads according to the packet instructions. Finely chop the mint and mix it into the couscous with a fork.
To serve, cut open the pittas to form a pocket and fill them evenly with fresh salad, couscous, and beef kofta.
