Garlicky Tofu & Nutty Veg

4 bok choy
1 head broccoli
2 carrots
4 garlic cloves
4 oz cashew nuts

16 oz firm tofu
Condiments
2 tbsp hoisin sauce
1 tbsp soy sauce

Method
Peel the carrots and cut them into sticks, then separate the broccoli florets. Season with salt and pepper then add to a large frying pan on medium-high heat with a drizzle of sesame oil. Stir-fry for 5 minutes.
Meanwhile, wash the bok choy and half lengthways. Cut the tofu into 2cm cubes and set both aside.
Add the tofu, nuts and crush the garlic straight into the pan, cook for a couple of minutes. Then add 2 tbsp hoisin sauce, 1 tbsp soy sauce, and the bok choy. Mix everything together cooking for another couple of minutes.
Once cooked, serve between four plates.
